The original recipe calls for all-purpose flour, but I have found them to be just as tasty with the substitution of some whole wheat flour. Stir buttermilk into dry mixture and stir just until dough is moistened. Line two baking sheets with parchment paper and set aside. Quick breads must be baked immediately due to the chemical leaveners used to make the baked good rise. Note: Keep in mind you can use any of our scone mixes in any of the following recipes; just pick whatever flavor sounds good to you for whatever treat you’re making. The cherry pitter is the life saver here, I have a couple but this one from OXO is my favorite. Those things come from the inside out, you can’t see them. Liquid fat is less effective than solid fat from preventing gluten and this mixing method helps to prevent excess from forming. The glaze is optional, but I highly recommend making it. I’m also freaking out over this Cast Iron Scone Pan, it’s from Old Mountain a super-sweet and thoughtful friend gave it to me, so I made scones to thank her….she said she was in a store on the way home from a trip and was trying to decide which piece of cast iron to get me then she saw the scone pan and knew that was the one she would get, she said it’s because she loves my scones and they are her favorite thing I make.
